Stevia Extract is a sweetener from the small (Stevia rebaudiana) plants native to Paraguay and Brazil. It was identified in 1887 by Antonio Bertoni, a South American scientist, who learned of the herb from the Guarani Paraguayan Indians. Stevia was known locally as Caa’-ehe or Kaa’he-e which means “sweet herb” or “honey leaf”. Two French chem-ists named Bridel and Lavielle began to unravel the secret of Stevia in 1931 with exploratory extraction work on Stevia rebaudiana leaves. Their research yielded a pure, white crystalline compound they named “stevioside.” They found this substance to be 100-300 times sweeter than table sugar and without toxic side effects in laboratory animals. Dozens of studies have shown Stevia to be a safe supplement for the human diet, and it is currently used extensively throughout the world in a variety of ways. Since far less needs to be used, Stevia extract will not affect blood sugar levels nearly as much as sucrose (table sugar) and should be useful as a sweetener for those with diabetes. Stevia may be used in baking and cooking. This product is from NOW FOODS.

Note: The maltodextrin used to dilute Stevia in this product is a complex carbohydrate that may be useful for some health conditions.

Dosage and use:
Since Stevia is 300 times as sweet as sucrose (table sugar), only minute quantities of this product are needed.
